The grapes are harvested from the most mountainous vineyards of the area, mainly around the village of Phytia at an altitude of up to 650m.
Xinomavro is a very tannic variety that Thymiopoulos “tames” with slow and gentle extraction. Ageing takes place in large oak barrels, allowing the purity of the variety to emerge. An extremely elegant red wine, with pronounced aromas of sweet cherry, wild rose, tomato, tea leaves and earth.
