Raffaele Pagano, visionary owner of Joaquin winery, started Project Capri in 2009 to produce a wine with lesser known, indigenous grape varieties.
The grapes are selected from various small vineyards in the area of Anacapri and Migliera, in Capri island.
The grapes are hand picked with a rigorous selection of the best bunches, sundreid for 3 days, then the vinification takes place in stainless steel tanks with as little intervention as possible. The wine remains in stainless steel for a few months before it is bottled, with a maceration period of 3/4 days.
